Green Fries

We all love these babies!

Green Fries

2 lb. Green Beans, trimmed
2 T. Olive Oil
Garlic Powder, to taste
Salt, to taste (I use 1 t.)

Heat oven to 400. Toss all ingredients except salt in large bowl. Spread on baking sheet. Bake for 30 minutes, or until desired doneness (I like mine crunchy and sometimes a bit dark). Stir once or twice, if your remember. Add salt to taste.

Nutrition Information:
1/2 Recipe. 286 calories, 14g fat (the good kind), 1188mg salt, 15g fiber, 9g protein, 60% VA, 120% VC, 17% calcium, 26% iron.

Tips:
Sometimes I dip them in marinara (this is probably because I usually serve them as a side with pasta). Mostly, I just gobble them up ~ before the kids do!

Looks great! Trevor's not a fan of fresh green beans (too used to the canned stuff, I think) so I'll have to give this a try. Thanks for the recipe.

BTW, am I the only one who doesn't know what green fries are?

No, I just invented the name. I thought my kids would be more likely to try/eat them with a name like that.

Brady doesn't like green beans very well either. But he always takes seconds (or thirds) when I make these -- if he's fast enough to beat me!

Rachael Ray roasts vegetables alot and she has done the green beans before, I have actually made a version of these and can attest to their deliciousness. As Rach says-the roasting almost gives them a nutty flavor which is so good. She does it with all kinds of veggies- broccoli, asparagus, cauliflour, carrots etc. Now give me the choice between these and real fries (calories not counting) I'll take the real, but these are good. I like on Roni's recipes all the fry options she had with the butternut squash (love that)and zuccini breaded and baked etc. I loved fried zuccini, so I am planning to make those soon. Thanks for the tip Kariann. I need to post somewhere more diet/health foods and ideas that I have come to lean on recently. You guys keep them coming.

I love those too, like Alisa said RR makes them and Billy doesn't like fresh green beans either but he likes these. Adam dips them in ketchup. I also love roasted broccoli, cauliflower...very yummy.
